    From single vineyard to double pergola. The grapes are left to dry 4 months after harvesting. The fermentation carried out by indigenous yeasts, at a controlled temperature of 15-20 degrees, takes about 40 days, during which the best characteristics of the grapes flow into the wine. After the completion of the malolactic fermentation, it is aged for 3 years in wooden barrels of 15 and 20 hl. The 8 months in the bottle close the aging in the cellar. Its dark burgundy color tells us about its aromas, rich in nuances, from black fruit to licorice. After a few years of aging it opens up to notes of tobacco and cocoa. The taste is majestic, rich, with a round body accompanied by a marked acidity in the finish that balances the wine.
